Ingredients:

  • ½ NESCAFÉ® Dolce Gusto®
    Espresso Intenso pod
  • 2 medium very ripe bananas
  • 3 tbsp maple syrup
  • 2 eggs
  • 1 tsp vanilla bean paste
  • 2 tbsp canola oil
  • 1 cup almond meal
  • 2 tbsp flax meal
  • 2 tbsp desiccated coconut
  • ½ tsp cinnamon
  • cup flaked almonds

Maple Coffee Syrup:

  • ½ Espresso Intenso pod
  • ½ tbsp maple syrup
  • ¼ tsp cinnamon

PREPARATION:

  1. Preheat oven at 160 degrees Celsius.
  2. Combine all wet ingredients (bananas, maple syrup, eggs, vanilla bean paste, oil, espresso) in a mixing bowl.
  3. Combine dry ingredients (almond meal, flax meal, desiccated coconut and cinnamon).
  4. Fold dry ingredients into wet ingredients until just combined.
  5. Line baking tray with baking paper and pour in the mixture. Sprinkle flaked almonds on top.
  6. Bake in the oven for approximately 30 minutes.
  7. Let cool on cooling rack.
  8. To make the maple coffee syrup, add all ingredients to a small saucepan. Bring to the boil and simmer for 1 minute.
  9. Set aside and let cool.
  10. Cut the banana coffee cake into 9 slices and serve with a drizzle of the maple coffee syrup.
