Ingredients:

  • ½ NESCAFÉ® Dolce Gusto®
    Café Au Lait pod
  • 1 cup dates
  • ⅓ cup almond meal
  • ½ cup spelt flour
  • ⅓ cup cocoa powder
  • 1 tbsp baking powder
  • 2 tbsp canola oil
  • ½ cup maple syrup
  • 2 eggs

Chocolate Frosting

  • 2 tbsp Café Au Lait pod
  • 1 tbsp coconut cream
  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup
  • 2 tbsp almond butter

Toppings:

  • Toasted coconut

Café Au Lait Chocolate Muffins

PREPARATION:

  1. Preheat oven at 180 degrees Celsius.
  2. Add dry ingredients (almond meal, spelt flour, cocoa powder, baking powder) to a bowl and mix well.
  3. In a separate bowl, add remaining wet ingredients (oil, maple syrup, eggs). Mix well to combine.
  4. Add wet ingredients to the flour mixture and fold until just combined.
  5. Carefully divide the mixture into a muffin tray. This will make approximately 10 muffins.
  6. Bake in the oven for approximately 12 minutes.
  7. Remove from muffin tray and let cool completely.
  8. To make the chocolate icing, combine all ingredients in a small bowl. Place into the refrigerator for 1 hour to set.
  9. Spread the chocolate icing on top of the muffins and sprinkle with toasted coconut.
